Crab Cakes II
1 pound fresh crabmeat, picked over
1 egg, beaten
1 teaspoon Worcestershire sauce
2 tablespoons mayonnaise
1 tablespoon mustard
1 tablespoon butter, melted
1 teaspoon garlic salt
1/2 cup bread crumbs
1 cup saltine cracker crumbs
vegetable oil for frying
Combine all the ingredients in a bowl and mix well. Sprinkle half the cracker crumbs on a sheet of aluminum foil. Form the crab mixture into patties and lightly batter them in the cracker crumbs, turning with a spatula to coat both sides. Heat the oil on medium high, then lift the crab cakes with a spatula and slide them into the pan. Brown on both sides; remove to paper towels to drain.
Serves 4 to 6.
